Clean eating just got interesting with this tasty, stir-fried Thai basil chicken.
Every guy gets bored of grilled and baked chicken. Eating clean can be tedious-at least until you master the stir-fry, the simplest, quickest way to make a healthy, tasty dish that all gets cooked at once. This meal has lean protein, clean carbs, and healthy fats, but taste like your favorite Thai takeout. Best of all it’s hard to screw up.
Quick Tip: Choose white rice over brown. Brown rice contains mineral-blocking phytic acid and may be harder to digest.

Servings: 1
Ingredients: 
1/2 cup  Uncooked jasmine rice
2 tsp  Canola oil
8 oz.  Chicken breast, sliced into thin strips
1 1/2 tsp  Salt and pepper to tastet
1/2 tsp  Ground pepper
1 tbsp   Soy sauce
5  Basil leaves, torn
1  Thai chili, chopped

Instructions:

  1. Boil water and add the rice to it.
  2. Place a sauté pan over medium heat, pour the oil in, and once it’s hot, put the chicken in the pan and season with salt and pepper.
  3. Cook for 1 minute, then add soy sauce, basil, and Thai chili. Mix well.
  4. Cook (while rice is boiling) for 12–15 minutes. When rice is done, add to pan, mix together, and serve hot.
